Iced Cerassie and Lime Pitcher (Tropical Sun)
A long iced pitcher of bitter Tropical Sun Cerassie, balanced with honey and plenty of lime. A grown up bitter citrus refresher.

Cerassie is bracingly bitter hot, so this pitcher leans into that and turns it into a long, adult iced drink, somewhere near a bitter citrus aperitivo. Brew it short to keep the bitterness in line, then balance it with honey and plenty of lime and serve it cold over ice.

You'll need
- 4 tea bags of Tropical Sun Cerassie
- 800ml freshly boiled water (100C)
- 3 tablespoons honey, or to taste
- 2 limes, half juiced and half sliced
- Plenty of ice
Method
- Brew on the short side: steep the 4 bags in the boiled water for 4 minutes, then lift them out so the bitterness stays in check.
- Stir in the honey while warm until it dissolves, then leave to cool and chill.
- Pour the chilled tea into a large jug and add the lime juice.
- Add the lime slices, top with plenty of ice, taste and add more honey if you like, and serve in tall glasses.
- Substitute a splash of pomegranate juice for some of the water when chilling the pitcher; it softens the bitterness and adds a jewel bright colour.
