Cape Chai Rooibos & Green Tea Latte

A two-tea latte that layers caffeine-free Cape chai Rooibos with a little Green Tea for lift. The rooibos brings the warm chai spice and a natural, honeyed sweetness; the small green tea share adds a fresh, grassy top note and a gentle wake-up without the full hit of a black-tea chai. Frothed milk pulls the two together into something smoother than either alone.

You'll need

  • 1 bag Dragonfly Organic Cape Chai Rooibos
  • 1 bag Teapigs Mao Feng Green Tea
  • 150ml water at about 85C
  • 150ml milk or oat milk
  • 1 tsp honey or maple syrup, optional
  • A pinch of ground cinnamon to dust

Method

  1. Rest the just-boiled kettle to about 85C so the green tea does not scorch.
  2. Steep both bags together in the 150ml water for 4 minutes, brewing the chai spice and the green tea into one concentrated base.
  3. Lift out the bags and stir the honey or maple syrup into the base if using.
  4. Warm the milk gently, then froth it until light and airy.
  5. Pour the frothed milk over the tea base, holding the foam back with a spoon, then spoon the foam on top.
  6. Dust with cinnamon and serve. Because only a small share is green tea, the caffeine stays low enough for late in the day.
  7. Warm a pinch of cinnamon into the milk as well, so the spice runs through the latte not just the foam.
What you'll end up with: Warm, lightly spiced and naturally sweet from the rooibos, with a fresh green lift running underneath and a soft, frothy top. A caffeine-light latte that tastes richer than it is.
