You'll need

Method

  1. Brew four tea bags in 500ml of just boiled water for six minutes, then lift them out.
  2. Stir in the sugar while the tea is hot, until it fully dissolves.
  3. Stir in the lemon juice, then let it cool to room temperature.
  4. Pour into a sterilised bottle, seal, and keep in the fridge; it lasts about two weeks.
  5. To serve, pour one part cordial to about five parts sparkling water over ice.
  6. Dissolve the sugar while the tea is still hot; it will not fully dissolve once the cordial has cooled.
What you'll end up with: A deep red, sweet sharp fruit tea cordial that keeps for a couple of weeks, ready to dilute into a long, fizzy fruit drink whenever you want one.
