The trick is the long, covered steep. Fruit and spice infusions cannot over brew, so give it the full six minutes, which is what makes it taste of mulled wine rather than fruit water.

You'll need

  • 1 Teapigs Winter Glühwein tea temple
  • 250ml water at a full rolling boil
  • 1 thin slice of orange
  • 1 clove or a tiny pinch of extra cinnamon, optional
  • 1 teaspoon honey, optional

Method

  1. Bring fresh water to a full rolling boil; the fruit and spice pieces need the full 100C to release their colour and warmth.
  2. Put the temple in the mug with the orange slice and any extra spice, and pour the boiling water over.
  3. Cover and steep for 6 minutes. Fruit infusions cannot over brew, so the long steep is what makes it taste of mulled wine rather than fruit water.
  4. Lift the bag out, leaving the orange in for a little more lift.
  5. Stir in honey if you want it sweeter, though the spice and fruit often carry enough. Serve in a heatproof glass to show off the deep red colour.
What you'll end up with: A deep red, fragrant, spiced cup that drinks like mulled wine without the alcohol or caffeine: warming, and good at any hour.
