Strawberry and basil is a classic pairing, and holy basil tulsi is a clever way to bring it to an ice lolly. Blend sweet strawberries with a gentle tulsi brew and a little honey, and the basil note lifts the fruit without anyone needing to chop a herb. Caffeine free, so the children can have one too.

You'll need

  • 1 tea bag of Tropical Sun Tulsi
  • 200ml freshly boiled water (100C)
  • 150g ripe strawberries, hulled
  • 1 tablespoon honey, or to taste
  • 100ml cloudy apple juice

Method

  1. Steep 1 tulsi bag in the boiled water for 3 minutes so the brew stays gentle, then lift it out and let it cool.
  2. Blend the strawberries with the honey and apple juice until smooth.
  3. Stir the cooled tulsi brew into the strawberry mix and taste for sweetness.
  4. Pour into lolly moulds, leaving a little room at the top, and add the sticks.
  5. Freeze for at least 4 hours or overnight, then dip the moulds briefly in warm water to release.
  6. Keep the tulsi brew light at 3 minutes; steeped longer it turns savoury and pulls the lolly away from the fresh strawberry note.
What you'll end up with: A fresh strawberry lolly with a gentle basil lift, a grown up flavour the children will still happily eat.
