
Strawberry and basil is a classic pairing, and holy basil tulsi is a clever way to bring it to an ice lolly. Blend sweet strawberries with a gentle tulsi brew and a little honey, and the basil note lifts the fruit without anyone needing to chop a herb. Caffeine-free, so the children can have one too.

You'll need
- 1 tea bag of Tropical Sun Tulsi
- 200ml freshly boiled water (100C)
- 150g ripe strawberries, hulled
- 1 tablespoon honey, or to taste
- 100ml cloudy apple juice
Method
- Steep 1 tulsi bag in the boiled water for 3 minutes so the brew stays gentle, then lift it out and let it cool.
- Blend the strawberries with the honey and apple juice until smooth.
- Stir the cooled tulsi brew into the strawberry mix and taste for sweetness.
- Pour into lolly moulds, leaving a little room at the top, and add the sticks.
- Freeze for at least 4 hours or overnight, then dip the moulds briefly in warm water to release.
- Keep the tulsi brew light at 3 minutes; steeped longer it turns savoury and pulls the lolly away from the fresh strawberry note.
