White Mocha with Melted White Chocolate

This makes a white mocha properly, with real white chocolate melted into the milk on top of the sachet. Make the sachet strong with a little hot water, then warm the milk with a couple of squares of white chocolate stirred in until smooth, froth it, and pour it over.

You'll need

  • 1 Starbucks White Mocha sachet (24g)
  • 100ml freshly drawn water, brought to a rolling boil, then cooled to about 90C (check with a thermometer)
  • 150ml whole milk
  • 2 squares of white chocolate, broken into small pieces
  • 1 generous swirl of squirty cream, for the top
  • 1 teaspoon of white chocolate sauce, for the drizzle
  • 1 warmed 350ml mug
  • 1 small saucepan
  • 1 small balloon whisk
  • 1 small handheld milk frother

Method

  1. Warm a mug with hot water and tip it out.
  2. Empty the sachet into the mug, add 100ml of hot water at around 90C and whisk into a strong base.
  3. Warm the milk in a small pan with two squares of white chocolate, whisking until the chocolate melts in smoothly.
  4. Once it just steams, take it off the heat and froth it into a thick foam.
  5. Pour the white-chocolate milk over the coffee base, then top with cream and a drizzle of white chocolate.
  6. Melt the white chocolate gently into the warming milk; rush it over high heat and it seizes into lumps.
What you'll end up with: A rich, sweet white mocha with a strong coffee base under creamy white-chocolate milk, finished with cream and a white chocolate drizzle. One for a sweet tooth.
