You can turn a Millionaires Mocha sachet into something much closer to a proper Coffee-shop mocha with one trick: make it with less water so it becomes a thick syrup, then top it with steamed, frothed milk. Finish with a swirl of cream, a dusting of Cocoa and a thread of caramel and you have a tall, layered mocha that drinks like a dessert.

You'll need

  • 1 Costa Millionaires Mocha sachet (23g)
  • 100ml freshly drawn water, brought to a rolling boil then left for 1 minute to drop to about 90C
  • 150ml whole milk
  • 1 generous swirl of squirty cream, for the top
  • 1 teaspoon of dark cocoa powder, for the dust
  • 1 teaspoon of caramel sauce, for the drizzle
  • 1 warmed 350ml mug
  • 1 small saucepan
  • 1 small balloon whisk
  • 1 small handheld milk frother

Method

  1. Warm a tall mug with hot water and tip it out.
  2. Empty the sachet into the mug and add just 100ml of hot water at around 90C, then whisk hard for thirty seconds into a thick, glossy syrup.
  3. Warm the milk in a small pan until it just steams, then froth it with a handheld frother into a thick foam.
  4. Pour the frothed milk slowly over the back of a spoon so it sits on top of the syrup in a clear layer.
  5. Top with a swirl of squirty cream, dust over a little cocoa through a sieve, and finish with a thin zigzag of caramel.
  6. Drink it within a few minutes, before the cream and foam sink into the syrup.
What you'll end up with: A tall, layered mug: a rich coffee and chocolate syrup at the base, a band of frothed milk above it, and a cream cocoa caramel top. Sweet, creamy and thick enough to sip slowly.
