Sorrel and Ginger Mule (Tropical Sun)
A ruby mule built on strong, chilled Tropical Sun Sorrel and Ginger with rum or vodka, lime and ginger beer.

A mule runs on ginger, so sorrel and ginger takes the job easily. Swap half the ginger beer for a strong, chilled brew of Tropical Sun Sorrel and Ginger and you pick up a deep red colour and a tart, gingery edge. White rum keeps it light and summery; vodka makes it a more classic mule.

You'll need
- 2 tea bags of Tropical Sun Sorrel and Ginger
- 200ml freshly boiled water (100C)
- 1 tablespoon honey or sugar
- 100ml white rum or vodka
- Juice of 1 lime
- 150ml chilled ginger beer or soda water
- Plenty of ice and lime wedges, to serve
Method
- Brew strong: steep the 2 bags in the boiled water for 6 minutes, then lift them out.
- Stir in the honey or sugar while warm, then leave to cool and chill.
- Fill two copper mugs or tumblers with plenty of ice.
- Divide the chilled tea, rum or vodka and lime juice between the mugs and stir.
- Top each with chilled ginger beer or soda, add a lime wedge, and serve.
- White rum keeps this light, but dark rum is the traditional Caribbean partner for sorrel if you want more depth; with vodka, add an extra squeeze of lime to make up for it.
