A mint mojito mocktail built on Moroccan mint Green Tea has a real mint kick that bottled mocktail bases lack: fresh muddled mint with cool-brewed mint tea, lime, a little sugar, soda and crushed ice. It tastes like a proper mojito because the tea gives it the green, vegetal backbone a syrup cannot. Easy white rum swap if you want it adult.

You'll need

  • 2 Good Earth Moroccan Mint Green Tea bags
  • 200ml water cooled to about 80C
  • 12 fresh mint leaves
  • 2 limes (juice plus wedges)
  • 2 teaspoons caster sugar (or 1 tablespoon honey)
  • Crushed ice and 250ml chilled soda water
  • Optional adult version: 50ml white rum per glass

Method

  1. Steep the 2 bags in 200ml water cooled to 80C for 4 minutes for a pale, fragrant base, then lift the bags out without squeezing. Cool and chill.
  2. Divide the mint leaves and 1 teaspoon sugar between two tall glasses; muddle gently with the back of a spoon to bruise the mint, do not crush it to mush.
  3. Add the juice of 1 lime and a lime wedge to each glass.
  4. Pour the chilled tea base over the muddled mint, then fill to the top with crushed ice.
  5. Top with chilled soda water and stir gently from the bottom up. Garnish with a fresh mint sprig.
  6. For an adult mojito, add 50ml white rum to the glass before the soda water.
