Mint Mojito Mocktail

You'll need
- 2 Good Earth Moroccan Mint Green Tea bags
- 200ml water cooled to about 80C
- 12 fresh mint leaves
- 2 limes (juice plus wedges)
- 2 teaspoons caster sugar (or 1 tablespoon honey)
- Crushed ice and 250ml chilled soda water
- Optional adult version: 50ml white rum per glass
Method
- Steep the 2 bags in 200ml water cooled to 80C for 4 minutes for a pale, fragrant base, then lift the bags out without squeezing. Cool and chill.
- Divide the mint leaves and 1 teaspoon sugar between two tall glasses; muddle gently with the back of a spoon to bruise the mint, do not crush it to mush.
- Add the juice of 1 lime and a lime wedge to each glass.
- Pour the chilled tea base over the muddled mint, then fill to the top with crushed ice.
- Top with chilled soda water and stir gently from the bottom up. Garnish with a fresh mint sprig.
- For an adult mojito, add 50ml white rum to the glass before the soda water.
