Welsh Tea Punch (Adult)

A Welsh Tea punch is an old fashioned warm punch built on strong Welsh Breakfast tea brewed long, sweetened with honey, sharpened with lemon and spiked with Welsh whisky or dark rum. Think of it as a hot toddy made by the potful, the sort of thing to warm a winter table. There is a 0% version below for anyone not drinking.

It uses Glengettie Welsh Breakfast Tea. Made in a punch pot, it serves four to six.

You'll need

  • 4 Glengettie Welsh Breakfast tea bags
  • 1 litre water at a full rolling boil
  • 4 tablespoons runny honey
  • Juice of 2 lemons, plus a few slices
  • 200ml Welsh whisky or dark rum, leave out for the 0% version
  • 1 cinnamon stick and a few cloves, for the pot

Method

  1. Boil the water, drop in the 4 bags with the cinnamon and cloves and steep, covered, 4 minutes. Lift the bags out so it does not turn tannic across a pot.
  2. Stir in the honey while the brew is hot so it dissolves, then stir in the lemon juice.
  3. Pour in the whisky or rum and the lemon slices. Heat very gently if needed but do not boil; you do not want to cook off the alcohol.
  4. Ladle hot from a punch pot or heatproof jug into mugs or heatproof glasses.
  5. Zero alcohol version: skip the spirit, double the lemon and add a splash of fresh apple juice for body. Stronger version: add an extra shot per glass.
  6. A clove studded lemon slice on top is the proper garnish.
What you'll end up with: A warm, spiced, honeyed Welsh tea punch with the lift of whisky or rum: a winter pot for the table, four to six guests, with a true 0% swap.
