Welsh Tea Punch (Adult)

You'll need
- 4 Glengettie Welsh Breakfast tea bags
- 1 litre water at a full rolling boil
- 4 tablespoons runny honey
- Juice of 2 lemons, plus a few slices
- 200ml Welsh whisky or dark rum, leave out for the 0% version
- 1 cinnamon stick and a few cloves, for the pot
Method
- Boil the water, drop in the 4 bags with the cinnamon and cloves and steep, covered, 4 minutes. Lift the bags out so it does not turn tannic across a pot.
- Stir in the honey while the brew is hot so it dissolves, then stir in the lemon juice.
- Pour in the whisky or rum and the lemon slices. Heat very gently if needed but do not boil; you do not want to cook off the alcohol.
- Ladle hot from a punch pot or heatproof jug into mugs or heatproof glasses.
- Zero alcohol version: skip the spirit, double the lemon and add a splash of fresh apple juice for body. Stronger version: add an extra shot per glass.
- A clove studded lemon slice on top is the proper garnish.
