Builder's Brew
A proper builder's brew: strong black tea steeped long and squeezed hard, with milk and two sugars.

A builder's brew is a cup of tea with its sleeves rolled up: strong, hot and sweet, the kind that gets you through a cold morning on site. The trick is to brew it longer than you would a polite cup, then give the bag a good squeeze against the side of the mug to wring out every last bit of strength. Milk and two sugars are traditional, though you can suit yourself. Best served with a biscuit for dunking.

You'll need
- 1 tea bag of Lipton Yellow Label
- 280ml freshly drawn water at 100C, just off the boil
- 30ml cold whole milk
- 2 sugar cubes (or 2 teaspoons granulated sugar)
- 1 300ml mug, warmed
- 1 saucer for covering during steep
Method
- Warm a big mug with a little just boiled water and tip it out.
- Pour in 280ml of water straight off the boil.
- Add the tea bag, cover, and leave it a good five minutes; a builder's brew wants to be strong.
- Squeeze the bag firmly against the side of the mug with a teaspoon to wring out the last of the strength, then lift it out.
- Add the milk and two sugars and stir until the sugar dissolves.
- Tip: a digestive or rich tea on the side for dunking is practically compulsory.
