Thompson's Irish Breakfast is an Assam-led Belfast blend, stronger and maltier than a typical English Breakfast and built for hard water. Brew it properly and you get a deep, reddish-brown cup that takes milk beautifully.

You'll need

  • 1 tea bag of Thompson's Irish Breakfast
  • 250ml freshly boiled water (100C)
  • Milk, to taste
  • Sugar, to taste (optional)

Method

  1. Pop the bag into your mug and pour over freshly boiled water.
  2. Brew for 3 to 5 minutes, pressing the bag once or twice for a stronger cup.
  3. Lift out the bag, then add milk until the colour is a deep, reddish brown.
  4. Add sugar if you like, stir, and enjoy.
  5. Press the bag firmly against the side of the mug before lifting it; Irish breakfast is built to take it, and the cup comes out darker.
What you'll end up with: A strong, deep-coloured cup that stands up to milk, exactly as an Irish breakfast should.
