Darjeeling is often called the champagne of teas, and Twinings Darjeeling deserves a careful hand. It is a light, floral Black Tea with a distinctive muscatel grape note, best brewed with water just off the boil and drunk black, or with no more than the smallest dash of milk so its delicacy survives.

You'll need

  • 1 tea bag of Twinings Darjeeling
  • 250ml water, just off the boil (about 95C)
  • A very small dash of milk, optional
  • A slice of lemon, optional

Method

  1. Boil the kettle, then let it settle for 30 seconds so it is just off the boil.
  2. Pop the Darjeeling bag in your mug and pour over the water.
  3. Steep for 3 minutes, no longer, to keep the floral, muscatel character bright.
  4. Lift out the bag and taste it black first, as Darjeeling is meant to be enjoyed.
  5. Add only the smallest dash of milk, or a slice of lemon, if you prefer.
  6. Lemon suits this delicate tea better than milk; a thin slice lifts the muscatel grape note without dulling the florals.
What you'll end up with: A light, floral cup with a delicate muscatel note, at its best drunk black or barely touched with milk.
