Method

  1. Boil the kettle, then let it settle for 30 seconds so it is just off the boil.
  2. Pop the Darjeeling bag in your mug and pour over the water.
  3. Steep for 3 minutes, no longer, to keep the floral, muscatel character bright.
  4. Lift out the bag and taste it black first, as Darjeeling is meant to be enjoyed.
  5. Add only the smallest dash of milk, or a slice of lemon, if you prefer.
  6. Lemon suits this delicate tea better than milk; a thin slice lifts the muscatel grape note without dulling the florals.
