The Proper Cup (Twinings Darjeeling)

You'll need
- 1 tea bag of Twinings Darjeeling
- 250ml water, just off the boil (about 95C)
- A very small dash of milk, optional
- A slice of lemon, optional
Method
- Boil the kettle, then let it settle for 30 seconds so it is just off the boil.
- Pop the Darjeeling bag in your mug and pour over the water.
- Steep for 3 minutes, no longer, to keep the floral, muscatel character bright.
- Lift out the bag and taste it black first, as Darjeeling is meant to be enjoyed.
- Add only the smallest dash of milk, or a slice of lemon, if you prefer.
- Lemon suits this delicate tea better than milk; a thin slice lifts the muscatel grape note without dulling the florals.
