Chill it. Green rooibos is one of the few things on this shelf that is better cold than hot, because the light, hay-like floral character that can read as thin in a mug turns clean and genuinely refreshing over ice, and it stays caffeine-free either way, so a jug can sit out for the whole house. Hot, it wants a smaller cup than you would give a black tea and nothing stirred into it. Do not buy it expecting the red box in a different colour, though; this is a lighter, greener drink and it will not stand in for ordinary tea.

Tick Tock Organic Green Rooibos is redbush that has not been oxidised.

Brew it just off the boil for five minutes and drink it without milk: it pours pale gold rather than rust red, and it is light and grassy where ordinary redbush is warm and woody. Naturally caffeine-free rather than decaffeinated.

Tick Tock Organic Green Rooibos is the version of redbush that most people have never met. Ordinary rooibos is rust red because the cut needles are bruised and left to oxidise before drying, exactly as black tea is. Green rooibos skips that step: the same plant, dried straight, so it never turns red at all. What comes out of the mug is pale gold rather than deep rust, and it tastes nothing like the red version.

The comparison that makes it click is the one between black tea and green tea, which are also the same plant treated two ways. Red rooibos is warm, woody and sweet. Green rooibos is light, grassy and faintly floral, with a delicacy that the red version has no interest in. It is still naturally caffeine-free, because that is a property of the plant rather than of the processing, and this box is sold as organic, which is the other half of what you are paying the extra for.

The Story Behind Tick Tock

Tick Tock is a redbush specialist, with a range built entirely from rooibos in one form or another rather than a general tea company carrying a single redbush line.

Green rooibos is a much smaller trade than red, which is most of why it costs more. Skipping oxidation means the cut plant has to be dried quickly and carefully, and there is no forgiving browning step to even out variation, so the handling has to be better. It also has a shorter history: rooibos has been drunk in South Africa for a very long time, but the unoxidised version is a comparatively recent commercial product aimed at people who already drink green tea.

What You Are Actually Buying

  • Forty bags, 72 grams: 40 cups, one bag each, at about 1.8 grams a bag. That is a lighter fill than a red rooibos bag, which is normal for the unoxidised leaf and not a short measure.
  • Naturally caffeine-free: not decaffeinated. There is no caffeine in the plant, so there is nothing to remove.
  • What it is not: not green tea, not red rooibos in a different box, not a remedy. It is a light caffeine-free infusion in its own right.

Getting It Right in the Cup

  • Water temperature: about 95 degrees Celsius, just off the boil.
  • Steep: five minutes, covered, and longer does no harm.
  • Milk: no. Red rooibos takes milk well; this does not, and a splash will cover the grassy and floral notes entirely.
  • Lemon or honey: a thin slice of lemon suits it, and a very small amount of honey suits it better than sugar does.
  • Storage: sealed, cool, dark and dry. It is a little more fragile than red rooibos because the floral note is the first thing to fade.
  • Resteeping: a second steep is pale and thin. A longer first steep gives you more for less trouble.
  • Best with: afternoons, after a heavy meal, evenings when you want something lighter than redbush, and hot weather.

Method
  1. Boil the kettle and let it stand half a minute, to about 95 degrees Celsius.
  2. Pour 250ml onto the bag and cover the mug with a saucer.
  3. Steep five minutes; longer does no harm.
  4. Lift the bag out and drink it without milk.

What you'll end up with: A pale gold cup, grassy and faintly floral, with almost no body and no bitterness at all. Do not wait for it to turn red, because it never will.
