This is the cold, fizzy, family friendly side of sorrel: a chilled brew of Tropical Sun Sorrel and Ginger, lengthened with soda and lime over ice. It keeps the tart, ruby red colour and the ginger heat that the rum version has, just without the rum, so it suits a summer afternoon or anyone skipping alcohol.

You'll need

  • 3 tea bags of Tropical Sun Sorrel and Ginger
  • 300ml freshly boiled water (100C)
  • 2 tablespoons honey or sugar
  • 200ml chilled soda water
  • 1 lime, half juiced and half sliced
  • A small piece of fresh ginger, grated (optional)
  • Plenty of ice

Method

  1. Brew strong: steep the 3 bags in the boiled water for 6 minutes, then lift them out.
  2. Stir in the honey or sugar while warm, add the grated ginger if you want more heat, then leave to cool and chill.
  3. Fill two tall glasses with ice and pour the chilled tea over, leaving room at the top.
  4. Add the lime juice, top each with chilled soda water, and stir gently.
  5. Finish with lime slices and serve straight away.
  6. Sorrel is naturally very tart; let guests add honey to their own glass rather than pre sweetening, as the level varies widely.
What you'll end up with: A long, fizzy, deep red cooler with a tart sorrel edge and a good kick of ginger, all without alcohol.
