Iced Cleanse
A crisp green and fennel iced tea: clean, savoury, and a change from the usual sweet fruit jugs.

Iced Cleanse is a crisp, green, gently aniseed iced tea that's lovely with cucumber and lime. The green base needs a cool brew so it doesn't turn bitter once chilled, while the fennel sharpens up nicely over ice, which makes this a savoury change from the usual sweet fruit jugs.

It uses Teapigs Cleanse, a whole leaf green and herbal blend. Ten minutes plus chilling, and it makes a jug.
You'll need
- 4 Teapigs Cleanse tea temples
- 500ml water, boiled then cooled to about 80C
- 500ml cold water
- Cucumber ribbons, lime slices and a little mint, to serve
- A little honey, optional
Method
- Boil the water and cool it to about 80C, then steep the 4 temples for 5 minutes; cooler water stops the green base going bitter once iced.
- Lift the temples out without squeezing, and stir in a little honey while warm only if you want it softened.
- Cool to room temperature, then chill gently rather than crashing over ice, which protects the delicate green note.
- Stir in the 500ml cold water.
- Serve over ice with cucumber ribbons, lime and mint; the cucumber plays to the clean green and the lime sharpens the fennel.
- Best within 2 days as green blends fade faster than black.
