How to Brew Passionfruit and Orange

Fruit infusions like Good Earth Passionfruit and Orange are built on hibiscus and rosehip, and those want the opposite of Green Tea: a proper rolling boil and a good long steep. Hibiscus is one of the few bases that really needs the full 100C, as it only gives up its deep ruby colour and tart body with real heat and time. Brew it too cool or too briefly and the cup comes out pale and thin, with the passionfruit and orange floating unsupported.

So bring the kettle right to the boil, pour it straight over the bag, cover the mug and leave it a full six minutes. The cup is naturally tart from the hibiscus and naturally sweet from the rosehip and fruit, so it drinks well as it is. Honey is optional, and milk has no place in a fruit infusion like this.
You'll need
- 1 Good Earth Passionfruit and Orange tea bag
- 250ml freshly drawn water, brought to a true rolling boil
- 1 thin slice of fresh unwaxed orange, to float (optional, doubles the orange character)
- 1 tsp acacia honey (optional; the cup is naturally tart sweet from the hibiscus and rosehip)
Method
- Bring the kettle to a full rolling boil. The hibiscus and rosehip base needs the whole 100C to give up its deep ruby colour and body; brewed cooler, the cup lands pale and the fruit notes have nothing to sit on.
- Warm the mug first, half filling it with hot water and tipping it out, so the brew does not lose heat as it steeps.
- Drop the bag into the warm mug and pour the boiling water straight over, to about a centimetre below the rim.
- Cover with a saucer or tea cosy to keep the orange and passionfruit aromas in the cup.
- Steep, covered, for a full six minutes. The hibiscus and rosehip extract slowly, and six minutes gives full colour without going too tannic.
- Lift out the bag and press it once against the side. Unlike green or Black Tea, a hibiscus bag takes a gentle squeeze without turning bitter.
- Float a thin slice of fresh orange on top if you like, to double up the orange already in the bag.
- Sweeten only if you want to; the rosehip and passionfruit usually make it sweet enough on their own.
- Drink it hot, or let it cool and pour it over ice; it works well either way. No milk in this one.
