Ginger Beer Style Green Tea Spritz (Mocktail)

Brew Twinings Ginger Green Tea good and strong, chill it, then lengthen it with soda and lime and you have a homemade answer to ginger ale, only with a Green Tea backbone behind the spice. Grate in a little fresh root ginger if you want real heat. No alcohol, plenty of fizz.

You'll need

  • 3 tea bags of Twinings Ginger Green Tea
  • 300ml freshly boiled water, cooled for about a minute (around 80C)
  • 2 tablespoons honey
  • 200ml chilled soda water
  • 1 lime, half juiced and half sliced
  • A small piece of fresh ginger, grated (optional)
  • Plenty of ice

Method

  1. Let the boiled water stand for about a minute, then steep the 3 bags for 4 minutes and lift them out without squeezing.
  2. Stir in the honey while warm, add the grated ginger if you want more heat, then leave to cool and chill.
  3. Fill two tall glasses with ice and pour the chilled tea over, leaving room at the top.
  4. Add the lime juice, top each with chilled soda water, and stir gently.
  5. Finish with lime slices and serve straight away.
  6. Use ginger beer rather than soda water for a double ginger spritz that is noticeably fuller and spicier.
What you'll end up with: A long, spicy drink with a lime edge and a good bite of ginger over the green tea, and not a drop of alcohol.
