The pale, creamy cousin of a chai hot chocolate: instead of dark chocolate, white is melted into the milk, so you get butter and vanilla notes rather than deep Cocoa. A vanilla chai powder and a scrape of fresh pod push the vanilla right to the front. Softer and sweeter than the dark version, it is the sort of thing for a cold evening on the sofa.

You'll need

  • 25g Drink Me Chai Vanilla Chai Latte powder (1 standard serving)
  • 250ml whole milk
  • 3 squares of white chocolate
  • Quarter of a fresh vanilla pod, seeds scraped out with a small knife
  • 1 large marshmallow
  • 1 teaspoon of caramel sauce, for the drizzle
  • 1 short cinnamon stick (about 3cm), for the saucer
  • 1 single vanilla shortbread biscuit, for the saucer
  • 1 warmed 400ml mug
  • 1 small saucepan
  • 1 small balloon whisk

Method

  1. Warm a large mug with hot water, then pour it away.
  2. Pour the milk into a small saucepan and drop in the white chocolate squares while the milk is still cold.
  3. Set over medium-low heat and whisk gently in slow circles for a couple of minutes as the white chocolate melts in; it scorches easily, so keep the heat gentle.
  4. Warm until it just steams, around 70C, not boiling; it should be glossy and pale.
  5. Off the heat, shower in the vanilla chai powder and whisk hard for thirty seconds until smooth, with a soft foam.
  6. Pour through a fine sieve into the warmed mug.
  7. Scrape the seeds from the vanilla pod and stir them gently into the foam, then drop in a marshmallow and pull a thin caramel zigzag across the top.
  8. Tip: white chocolate scorches more easily than dark, so keep the heat low and keep whisking as it melts.
What you'll end up with: A pale, creamy white hot chocolate, vanilla-forward with a soft chai-spice undercurrent and a marshmallow on top.
