Tropical Green Tea Granita is a light, flaky frozen dessert built on a strong brew of the mango and passion fruit green. It is dairy free and barely sweetened, so it lands clean and refreshing rather than rich, with the tropical fruit doing most of the work.

Serves four. Brew the green strong but still at 80C so the base stays sweet, then freeze it in a shallow tub and scrape it through with a fork now and then to build the icy flakes.

Method

  1. Rest the boiled kettle for about 90 seconds, then steep three bags in 400ml of roughly 80C water for 4 minutes to make a strong tea. Lift the bags out without squeezing.
  2. Stir the sugar into the hot tea until dissolved, then add the lime juice. Cool completely.
  3. Pour into a shallow freezer tub and freeze. After about an hour, scrape through with a fork, then repeat every 30 to 40 minutes for 3 to 4 hours until you have light, icy flakes.
  4. Fork through once more and spoon into glasses, with fresh mango if you like.
What you'll end up with: Flaky shards of tropical green tea ice, sweet with mango and sharp with passion fruit, ideal in the heat.
