You'll need

  • 3 tea bags of Tetley Lemon and Ginger
  • 1 litre freshly boiled water (100C)
  • 3 tablespoons honey, to taste
  • 1 orange, sliced
  • 1 cinnamon stick and 2 cloves
  • A few slices of fresh ginger (optional, for extra heat)

Method

  1. Put the bags, orange slices, cinnamon, cloves and fresh ginger in a large pan. Pour over the freshly boiled water.
  2. Steep gently for 8 to 10 minutes without boiling hard, removing the tea bags after 5 minutes so it does not turn bitter.
  3. Stir in the honey to taste.
  4. Ladle into mugs or heatproof glasses, leaving the spices behind. A warming, caffeine-free, alcohol-free batch for a crowd.
  5. Hold it on the lowest heat with a lid to serve over time; let it boil and the spice and citrus aromas cook away.
What you'll end up with: A big pan of warm spiced lemon-ginger, festive and hands-warming, caffeine-free and alcohol-free for a cold day.
