These lollies get their deep ruby colour straight from the hibiscus in Tropical Sun Sorrel and Ginger, so there is no need for any food colouring. Brew the tea strong and sweeten it, then loosen the tartness and the ginger with a splash of apple juice, which makes it gentler for younger ones. Being caffeine-free, they are fine for children.

You'll need
- 4 tea bags of Tropical Sun Sorrel and Ginger
- 400ml freshly boiled water (100C)
- 2 tablespoons honey or sugar
- 150ml apple juice
Method
- Brew strong: steep the 4 bags in the boiled water for 6 minutes, then lift them out.
- Stir the honey or sugar into the warm tea until it dissolves.
- Mix in the apple juice to soften the ginger for younger tastes, then leave to cool.
- Pour the cooled tea into the lolly moulds, add the sticks, and freeze for at least 4 hours or overnight.
- To release, dip the moulds in warm water for a few seconds and pull gently.
- The ruby colour deepens as the lolly freezes; no food colouring is needed, the hibiscus in the sorrel does the work.
