Frozen Sorrel and Ginger Lollies (Caffeine Free)

Method

  1. Brew strong: steep the 4 bags in the boiled water for 6 minutes, then lift them out.
  2. Stir the honey or sugar into the warm tea until it dissolves.
  3. Mix in the apple juice to soften the ginger for younger tastes, then leave to cool.
  4. Pour the cooled tea into the lolly moulds, add the sticks, and freeze for at least 4 hours or overnight.
  5. To release, dip the moulds in warm water for a few seconds and pull gently.
  6. The ruby colour deepens as the lolly freezes; no food colouring is needed, the hibiscus in the sorrel does the work.
