Lemongrass White Sangria (Tropical Sun, Adult Cocktail)

Lemongrass and crisp white wine are a natural summer pairing, so a chilled brew of Tropical Sun Lemongrass makes a fine base for a white sangria. It lightens the wine, brings the apple and orange forward, and turns the jug into something fresher and easier to drink. For over-18s, in sensible measures.

You'll need

  • 3 tea bags of Tropical Sun Lemongrass
  • 300ml freshly boiled water (100C)
  • 1 bottle chilled dry white wine
  • 1 apple and 1 orange, thinly sliced
  • 2 tablespoons honey, or to taste
  • Soda water, to top, and plenty of ice

Method

  1. Steep the 3 lemongrass bags in the boiled water for 5 minutes, then lift them out and stir in the honey while warm.
  2. Leave the lemongrass tea to cool, then chill it well.
  3. Pour the white wine and the chilled lemongrass tea into a large jug and add the sliced fruit.
  4. Chill for at least an hour so the flavours mingle.
  5. To serve, fill glasses with ice, pour over the sangria and top each with a splash of soda. Drink responsibly.
  6. Use a dry Pinot Grigio or Sauvignon Blanc, not an oaked Chardonnay; the lighter wine keeps the lemongrass in front.
