Camomile takes happily to gin, especially a floral one. Brewed double strength and chilled, a camomile and lemongrass tea brings a honeyed, lightly citrussy base to a long spritz, then soda takes it the rest of the way. Works best in a tall glass with a generous amount of ice. One measure of gin per glass, for over-18s.

You'll need

  • 2 tea bags of Tropical Sun Calm
  • 200ml freshly boiled water (100C)
  • 1 teaspoon honey, to balance
  • 50ml gin (25ml per glass)
  • Chilled soda water, to top
  • Lemon slices and plenty of ice

Method

  1. Steep the 2 tea bags in the boiled water for 5 minutes, then lift them out and stir in the honey while warm.
  2. Leave the tea to cool, then chill it well.
  3. Fill two tall glasses with ice and divide the chilled tea and the gin between them.
  4. Top each glass with chilled soda water and stir once.
  5. Finish with lemon slices and serve straight away. One glass each.
  6. A floral gin works better here than a juniper forward London Dry; try an elderflower or rose gin, which deepens the camomile note rather than competing with it.
What you'll end up with: A soft, long spritz, honeyed camomile and gentle citrus lifted by gin and kept fresh by the soda.
