Spiced Chai Porridge

Porridge is the breakfast a cold morning calls for, and this one runs warm chai spice through every spoonful: a stovetop bowl made with whole milk for body, the spiced chai powder stirred in at the end. Rolled oats simmered gently in milk, then finished with golden syrup and a good grating of fresh apple.

The grated apple lifts the chai spice better than any dried sweetener, and a scatter of toasted almonds gives it some crunch.

You'll need

  • 25g Drink Me Chai Spiced Chai Latte powder (1 standard serving)
  • 50g rolled porridge oats (not jumbo, not steel cut)
  • 300ml whole milk
  • 1 tablespoon of golden syrup
  • Half a fresh red apple (about 75g), with skin on
  • 1 small handful of toasted flaked almonds (about 15g)
  • 1 warm porridge bowl
  • 1 small heavy based saucepan (about 16cm diameter)

Method

  1. Put the oats and milk into a small heavy based saucepan while the milk is still cold.
  2. Set over medium low heat and stir gently in slow circles as it warms, so the oats do not settle on the base.
  3. Bring to a soft simmer, then lower the heat and cook for about six minutes, stirring now and then, until thick and creamy.
  4. Shower in the chai powder and stir hard for thirty seconds until it is fully through and the porridge deepens in colour.
  5. Off the heat, stir the golden syrup through.
  6. Spoon into a warm bowl.
  7. Grate the apple, skin on, straight over the top, then scatter over the toasted almonds.
  8. Tip: grate the apple at the last minute so it stays fresh and does not brown.
What you'll end up with: A creamy bowl of warm chai porridge topped with fresh grated apple and toasted almonds, gently sweet and spiced.
