The recipe

Exact quantities, then the method.

A hot toddy and spiced chai are a natural match: the cardamom, ginger and cinnamon in the chai sit beautifully with whisky, honey and lemon. Brew the turmeric chai strong, stir in honey while it is hot, then add a measure of whisky and plenty of lemon, with a clove-studded orange slice to round it out.

It is a warming drink for a cold evening. Makes one; leave the whisky out and top with hot water for an alcohol-free version.

You'll need

  • 1 tea bag of Yogi Tea Organic Turmeric Chai
  • 200ml just-off-boil water (95C)
  • 30ml whisky (alcohol-free swap: 30ml hot water)
  • 1 tablespoon runny honey
  • 2 slices fresh lemon
  • 1 slice fresh orange, studded with 3 cloves
  • 1 280ml heatproof glass mug

Method

  1. Warm a heatproof glass or mug.
  2. Brew the tea bag in 200ml of freshly boiled water for five minutes, covered, then lift it out.
  3. Stir in the honey while the tea is hot until it dissolves.
  4. Add the whisky, the lemon slices and the clove-studded orange slice.
  5. Stir once and sip slowly while hot.
  6. For an alcohol-free version, leave out the whisky and top up with a splash more hot water.
What you'll end up with: A golden, spiced toddy, warming and lightly sweet, with the chai spices and whisky behind the honey and lemon. A proper drink for a cold night.
