Spiced Black Tea Cordial
A concentrated spiced black tea syrup to keep in the fridge and dilute hot or over soda. One brew, a fortnight of fast drinks.

This is a concentrated, lightly spiced Black Tea syrup to keep in the fridge and dilute on demand: hot for a quick spiced cuppa, or topped with soda for an iced long drink. One short brew of Teapigs Everyday Brew, reduced with sugar, lemon and a little spice, makes enough for a fortnight of drinks.

It is a handy thing to have in: the spice and citrus do the work, so a cup or a cold glass comes together in seconds.
You'll need
- 5 Teapigs Everyday Brew tea temples
- 400ml water
- 250g caster sugar
- Juice and pared zest of 1 lemon
- 1 cinnamon stick, optional
- 3 cloves, optional
Method
- Bring the water to the boil, drop in the five tea temples and steep for 4 minutes only, then lift them out so it does not turn bitter.
- Return the brew to the pan, add the sugar, lemon zest and the optional spices, and stir over a low heat until the sugar fully dissolves.
- Simmer gently for 5 minutes until it just thickens to a thin syrup, then stir in the lemon juice and take it off the heat.
- Cool, strain out the zest and spices, and pour into a clean bottle.
- To serve hot, mix 1 part cordial with 4 parts just boiled water. Over ice, mix 1 part cordial with 4 parts cold soda water.
- Keeps in the fridge for up to 2 weeks; shake before use.
