Brewing the perfect cup

Water temperature100°C, straight off the boil, because the theaflavins and thearubigins only come out fully at that heat.
Measure1 bag in 200ml gives a standard cup, while 2 bags in 300ml takes it to builder strength.
Steep3 to 5 minutes, leaving it nearer 5 if you take plenty of milk and nearer 3 for a lighter mug.
ServiceSplash in full fat milk and stir, adding sugar to your own taste. Casein in the milk rounds off the tannins, which is the reason most British tea ends up with milk in it.
Iced versionSteep 4 bags hard in 500ml; with the tea still warm, 4 tablespoons of caster sugar go in to dissolve. Once cold, lengthen it with 500ml of cold water, then juice 2 lemons into it.
