Coarse pepper is the whole argument for this box over a plain cracker. Ground pepper gives an even warmth the palate stops registering by the third day; cracked leaves particles big enough to be met one at a time, so the heat arrives in flashes with quiet stretches between them, and a large box still has your attention at the end of a fortnight. It is also the one seasoning on this shelf that a cheese does not have to fight, because pepper and cheese were partners long before anybody thought of putting one on the other. There is real body here too, enough to hold a wedge on a fork without folding, which on a shelf of thin flatbreads is not a given. The only shopper it lets down is the one who wanted a cracker that vanishes under the topping. Wheat cracker, so not one for a gluten-free table.
