illycaffè was founded in Trieste in 1933 by Francesco Illy and the company is still based there. Trieste was the coffee port of the Austro-Hungarian empire and it kept a coffee culture distinct from the rest of Italy, which is the simplest explanation for why illy tastes lighter and more aromatic than the Neapolitan houses. Fresh Ground Espresso
How to dial in an espresso with illy Classico beans.
- 16 to 18g illy Classico beans
- Filtered water at 92 to 94°C
- A burr grinder set fine
- A tamper and a warmed cup
- Grind 16 to 18g of illy Classico Coffee Beans - Classic Roast, 250g fine, directly into the basket, immediately before you brew.
- Level the bed with a finger and tamp firm and flat. An uneven bed is the most common cause of a shot that runs fast on one side.
- Pull for 25 to 30 seconds, aiming for roughly twice the dry weight in the cup.
- Adjust one thing at a time. Too fast and sour, grind finer. Too slow and harsh, grind coarser. Leave the dose alone while you do it.
What you'll end up with: A sweet, floral Arabica shot with a thick crema and a cocoa tail. Once the grind is right, write the setting down; it will drift as the tin empties and the beans dry.
The Cafetière, Done Properly
How to brew illy Classico in a cafetière without the sludge.
- 18g illy Classico beans, ground coarse
- 300ml water at 94 to 96°C
- A three-cup cafetière and a spoon
- Grind 18g of illy Classico Coffee Beans - Classic Roast, 250g coarse, about the texture of coarse sea salt.
- Pour all 300ml of water in at once and put the lid on with the plunger up.
- Wait four minutes, then break the crust with a spoon and skim the foam and floating grounds off the top.
- Plunge slowly and decant the whole pot straight away. Coffee left standing on the grounds keeps extracting and turns bitter.
What you'll end up with: A full-bodied, low-sediment cup. Skimming the crust is the step most people skip and it is the one that removes the grit.
Pour Over For The Aromatics
How to make a filter cone brew with illy Classico that keeps the floral top note.
- 18g illy Classico beans, ground medium
- 300ml water at 94°C
- A filter cone and a paper filter
- Rinse the paper filter with hot water and tip the rinse water away. This removes the papery taste and warms the cone.
- Bloom 18g of medium ground illy Classico Coffee Beans - Classic Roast, 250g with 50ml of water and wait 30 seconds while it degasses.
- Pour the remaining 250ml in slow circles, keeping the bed level and never pouring down the sides.
- Finish the whole brew inside three minutes. If it drains much slower than that, grind coarser next time.
What you'll end up with: The clearest, most aromatic cup this tin produces. Paper takes out the oils, so the body is lighter and the floral notes are easier to pick out.
Overnight Cold Brew Concentrate
How to cold brew illy Classico for the fridge.
- 70g illy Classico beans, ground coarse
- 1 litre cold filtered water
- Ice, to serve
- A jug and a paper filter
- Stir 70g of coarse ground illy Classico Coffee Beans - Classic Roast, 250g into 1 litre of cold water until every grain is wet.
- Cover and leave in the fridge for 14 to 16 hours. Longer than 20 hours starts to turn woody.
- Strain through a paper filter, slowly, and do not squeeze the grounds.
- Bottle and keep refrigerated for up to three days. Serve over ice, neat or cut with water or milk.
What you'll end up with: A sweet, low-acid concentrate with none of the hot-brew sharpness. Cold water never extracts the harsher compounds in the first place, which is why this tastes rounder than iced coffee made from a hot brew.
Cappuccino At Home
How to build a cappuccino with illy Classico that still tastes of coffee.
- 16 to 18g illy Classico beans for a double shot
- 150ml whole milk, or barista oat milk
- Cocoa powder to dust, optional
- Pull a double shot slightly tighter than usual, around 30g in the cup, so it carries through the milk.
- Steam 150ml of milk to about 60°C, stretching it for a few seconds at the start to build a proper foam.
- Pour the milk in, then spoon the foam over the top to finish. A cappuccino should be roughly a third coffee, a third milk, a third foam.
- Dust with cocoa if you want it, and drink it straight away.
What you'll end up with: A balanced milk coffee where the caramel and cocoa notes survive. The floral top note does not, which is simply what milk does to an aromatic Arabica.
Tiramisu Soaking Coffee
How to brew illy Classico for soaking sponge fingers.
- 36g illy Classico beans for four espresso shots
- 2 tablespoons caster sugar
- 2 tablespoons marsala or dark rum, optional and for adults only
- Sponge fingers, mascarpone, eggs and cocoa for the rest of the pudding
- Pull four shots of illy Classico Coffee Beans - Classic Roast, 250g into a shallow bowl, or brew 200ml strong in a moka pot.
- Stir in the sugar while the coffee is hot so it dissolves, then the marsala or rum if you are using it.
- Cool completely before you start dipping. Hot coffee turns sponge fingers to mush in about two seconds.
- Dip each finger for no more than a second a side and build the pudding as usual. Chill for at least four hours.
