Tetley Green Tea Lemonade is a homemade cooler that puts the tea front and centre instead of hiding it under sugar. Cooled Green Tea gives it a smooth, slightly grassy backbone, fresh lemon brings the tartness, and a splash of fizz lifts the whole thing into a long, refreshing summer drink.

Makes two glasses and there is no alcohol in sight, so it suits everyone at the table. Brew the green at 80C as usual to keep it sweet rather than bitter, then let the lemon and a touch of honey do the rest.

You'll need

  • 2 tea bags of Tetley Pure Green Tea
  • 200ml just off boil water cooled to about 80C (boil, then rest the kettle for roughly 90 seconds)
  • Juice of 1 lemon (about 40ml)
  • 2 teaspoons honey or sugar, to taste
  • 300ml chilled sparkling or still water
  • Ice, plus lemon slices and mint to serve

Method

  1. Rest the boiled kettle for about 90 seconds, then steep two bags in 200ml of roughly 80C water for 3 minutes. Lift the bags out without squeezing and let the tea cool.
  2. Stir the honey into the still warm tea until it dissolves, then add the lemon juice.
  3. Chill the sweetened tea, then pour into a jug over plenty of ice.
  4. Top with the sparkling or still water, stir gently, and serve with lemon slices and mint.
  5. The sweetened tea base keeps chilled for up to 3 days; add the sparkling water only at serving so the fizz lasts.
What you'll end up with: A long, bright, lightly fizzy green tea lemonade, tart and refreshing with a smooth green backbone.
