A fizzy homemade lemonade made with strong brewed moringa green tea, fresh lemon and sparkling water over ice.

Sparkling Moringa Lemonade

Brew moringa Green Tea on the strong side, sweeten it just a little, then sharpen it with plenty of fresh lemon and lengthen it with sparkling water. The result is a homemade tea lemonade that knocks spots off anything from a bottle, with a soft green undertone stopping it being all sugar and citrus.

You'll need

  • 2 Dalgety Moringa with Green Tea bags
  • 200ml freshly drawn water, brought to a rolling boil then left for 2 minutes to drop to about 80C
  • 1 tablespoon of golden caster sugar
  • 50ml fresh lemon juice (about 1 large lemon)
  • 100ml chilled fresh sparkling water
  • 2 fresh mint sprigs, for the ice
  • 1 thin lemon wheel, for the rim
  • 1 tall 450ml tumbler, chilled in the freezer for ten minutes
  • Enough cubed ice to fill the tumbler (about 250g)
  • 1 small heatproof jug
  • 1 wide paper or metal straw

Method

  1. Put a tall glass in the freezer so it is properly cold by the time you build the drink.
  2. Boil 200ml of water and leave the kettle to stand for a couple of minutes; it will settle to about 80C, right for green tea.
  3. Steep two tea bags in the hot water for three minutes, lift them out without pressing, then stir in the sugar until it melts.
  4. Drop the jug into a bowl of cold water to bring the sweetened tea down to room temperature.
  5. Take the glass from the freezer, fill it with ice and pour the lemon juice straight over.
  6. Add the cooled tea, then float the sparkling water on top, poured down the back of a spoon so it keeps its fizz.
  7. Stand a couple of mint sprigs in the ice and hook a lemon wheel on the rim before you serve.
  8. Making a batch? Keep the sweetened tea chilled, then build over ice and add the fizz only as you pour.
What you'll end up with: A pale green, lively glass: sweet sharp from the lemon, gently sparkling, with the green tea giving it more depth than ordinary lemonade. Cold, clean and easy to drink in the sun.
