Milk Bubble Tea (Yorkshire Tea Toast and Jam)
A proper black milk tea boba on Yorkshire Tea Toast and Jam, the jam note giving it a jam and cream lean.

Black Tea and milk is the classic bubble tea base, so Yorkshire Tea Toast and Jam takes to it naturally. Brew it strong, sweeten, then pour over ice and milk with a spoonful of cooked tapioca pearls. The strawberry jam note gives it a jam and cream lean you do not get from a plain builder's brew.

You'll need
- 3 tea bags of Yorkshire Tea Toast and Jam
- 300ml freshly boiled water (100C)
- 2 tablespoons sugar or honey, or to taste
- 100g dried tapioca pearls (boba)
- 150ml milk of your choice
- Plenty of ice
Method
- Cook the tapioca pearls in plenty of boiling water as per the pack, then drain and toss in a little honey to keep them loose.
- Steep the 3 tea bags in the boiled water for 5 minutes for a strong brew, then lift them out and stir in the sugar.
- Leave the tea to cool, then chill it well.
- Spoon the warm pearls into the base of two tall glasses and add a good handful of ice to each.
- Pour over the chilled tea, top with milk, stir gently and serve with wide straws.
- Stir a teaspoon of strawberry jam into the glass before the tea; it melts in and deepens the toast and jam note.
