Make Ahead Everyday Brew Latte (Dairy Free)
A make ahead black tea concentrate that pulls a dairy free latte in seconds on a weekday morning, with no curdling.

This sets up a Black Tea latte for busy mornings: brew a strong concentrate once, keep it in the fridge, and you can pull a dairy free latte in barely a minute any day that week. The key is using the concentrate cold, which stops plant milk curdling the way it does against fierce, hot, tannic tea.

It uses Teapigs Everyday Brew, a brisk whole leaf black tea. Ten minutes once, then a quick latte all week.
You'll need
- 6 Teapigs Everyday Brew tea temples
- 300ml just boiled water, for the concentrate
- Barista oat or soya milk, about 200ml per latte
- Maple syrup or sugar, to taste
- A sterilised 350ml bottle for the concentrate
Method
- Make the concentrate: steep all 6 temples in 300ml just boiled water for 5 minutes, squeeze, then cool and pour into the bottle. It keeps 4 days chilled.
- For each latte, pour about 60ml of the cold concentrate into a mug; using it cold from the fridge avoids the curdling that fierce hot tannic tea causes.
- Heat about 200ml barista oat or soya milk to 60C, steaming not boiling, then froth it.
- Stir a little maple syrup into the concentrate, then pour the warm milk in slowly while stirring.
- Spoon the foam on top. The make ahead concentrate plus barista milk gives a stable, fleck free latte every time.
- Shake the bottle before each use and discard after 4 days.
