Make Ahead Everyday Brew Latte (Dairy Free)

Method

  1. Make the concentrate: steep all 6 temples in 300ml just boiled water for 5 minutes, squeeze, then cool and pour into the bottle. It keeps 4 days chilled.
  2. For each latte, pour about 60ml of the cold concentrate into a mug; using it cold from the fridge avoids the curdling that fierce hot tannic tea causes.
  3. Heat about 200ml barista oat or soya milk to 60C, steaming not boiling, then froth it.
  4. Stir a little maple syrup into the concentrate, then pour the warm milk in slowly while stirring.
  5. Spoon the foam on top. The make ahead concentrate plus barista milk gives a stable, fleck free latte every time.
  6. Shake the bottle before each use and discard after 4 days.
