How to Brew Lemon Balm Tea

Lemon balm is a gentle, lemony herb from the mint family, and this brews into a soft, caffeine free cup with a light citrus and mint character that needs nothing added.

Keep the saucer on while it steeps, as lemon balm's flavour sits in delicate aromatic oils that drift off with the steam, and covering the cup holds them in. Five minutes is plenty.
You'll need
- 1 pyramid tea bag of Teapigs Happy Tea With Lemon Balm
- 250ml freshly drawn water at 100C, just off the boil
- 1 250ml mug, warmed
- 1 saucer for covering during steep
Method
- Warm your mug and bring the water to a boil.
- Add one pyramid bag and pour over 250ml of just boiled water.
- Cover with a saucer and steep for five minutes to hold in the aromatics.
- Lift out the bag, draining it against the rim.
- Drink it as it is, as it needs no sugar or milk.
- Tip: try it with a thin slice of fresh lemon in the mug for a brighter citrus note.
