Green tea is the second largest category we ship after British black, and the one with most variation in quality. A bagged supermarket Sencha is a different drink from a stone ground Japanese matcha, a single origin Chinese Long Jing, or a flavoured Pukka green and mint. Tier 1: Premium loose leaf and matcha (Β£0.30+ per cup)

The single most broken thing about UK green tea drinking: people pour boiling water on it.
- Water at 80Β°C, not 100Β°C. Boil the kettle and let it stand 90 seconds, or pour boiling water into a cold cup before brewing. Above 85Β°C the catechins (the bitter compounds) over extract.
- Steep 1-3 minutes for bagged, 1-2 for loose Sencha. Long steeped green tea is bitter green tea.
- 2g of leaf per 200ml cup for loose, or one bag per 200ml.
- No milk. Milk and green tea produce a strange combination nobody enjoys.
- Optional honey. Sugar and green tea is unusual; honey works for some palates.

Approximately 30-40mg per 200ml from a bag, less than the 50mg in a strong black. Matcha is higher (60-70mg) because you consume the whole leaf. Decaf green tea is 2-5mg.

- Sencha (Japan), the everyday Japanese green. Grassy, vegetal, umami sweet.
- Long Jing / Dragonwell (China, Hangzhou), pan fired, chestnut sweet, the prestigious Chinese green.
- Gyokuro (Japan), shade grown for 3 weeks before picking, intense umami, expensive.
- Genmaicha Japanese green with toasted brown rice, savoury, popular with food.

Quality and freshness matter, but brewing matters more, eighty degrees not boiling, one to three minutes, no milk. Most people who think they dislike green tea have only had it scalded.
