Here's a tea latte you can have last thing at night: a decaf English Breakfast latte on plant milk, creamy and warming with nothing to keep you up. Decaf and plant milk together throw up two problems, weak tea and curdled milk, so you brew a strong, short concentrate and add barista milk the right way round.

You'll need

  • 2 Teapigs Decaf English Breakfast tea temples
  • 120ml just boiled water, for a strong concentrate
  • 200ml barista oat or soya milk
  • 1 teaspoon maple syrup or sugar, to taste
  • A pinch of cinnamon or nutmeg, optional

Method

  1. Make a concentrate: steep 2 decaf temples in just 120ml just boiled water for 5 minutes. Two bags, little water and a longer steep give decaf enough strength to stand up to milk.
  2. Let the concentrate cool for a minute. Pouring plant milk into fiercely hot tannic tea is what makes it curdle.
  3. Heat the barista oat or soya to about 60C, steaming not boiling, then froth it.
  4. Stir the maple syrup into the tea concentrate, then pour the warm milk in slowly while stirring, not the other way round.
  5. Spoon the foam on top and dust with cinnamon or nutmeg.
  6. Because it is decaf, you can have it last thing with no caffeine to keep you up.
What you'll end up with: A creamy, dairy-free tea latte with a stable foam and no curdling, and no caffeine, so it's the kind you can have at ten at night.
