The Story Behind Familijne
Familijne is the wafer format that Jutrzenka, a Polish confectionery house, is best known for: thin baked sheets stacked with cream and sold as one rectangular block for the house rather than as separate biscuits. The plain cream version is the original idea of the range. Everything else in the line is a variation on it, which is the usual order of things and worth saying out loud, because the flavoured packs tend to get picked up first.
The case for the plain one has nothing to do with nostalgia. A flavoured cream tastes of the specification it was built to; a plain cream is judged on balance and on whether the wafer is properly crisp. It is a harder product to make well and an easier one to serve, because it sits beside coffee, tea, fruit or ice cream without arguing.

How to make The Green Tea Break with Familijne Cream Wafers.
- 2 fingers of cream wafer, at room temperature
- 1 cup sencha or gunpowder green tea
- Water off the boil, around 80C
- Brew the green tea a little cooler than boiling so it stays grassy rather than turning bitter.
- Serve the wafer at room temperature; chilled cream reads waxy and loses the vanilla.
- Alternate sips and bites rather than dunking. A green tea is too delicate to hold a wafer and the sheet softens in seconds.
- Notice the toast of the sheet on the second bite. It is audible here in a way it never is in a flavoured wafer.
Wafer and Pear Stack
How to make Wafer and Pear Stack with Familijne Cream Wafers.
- 4 flat pieces of wafer
- 1 ripe pear, thinly sliced
- 2 tablespoons thick Greek-style yoghurt
- A little honey
- Lay a piece of wafer flat and spread it thinly with yoghurt rather than thickly; too much and the sheet goes soft before it reaches the plate.
- Layer the pear over it and top with a second piece of wafer.
- Drizzle with honey and serve within a minute or two.
- Eat with your hands and accept that it will shatter. That is the correct outcome.
What you'll end up with: The plain wafer used as a building material rather than as a biscuit. The flavoured packs in the same range cannot do this without the nut note taking over.
Jam Wafers
How to make Jam Wafers with Familijne Cream Wafers.
- 8 flat pieces of wafer
- 4 teaspoons raspberry or apricot jam
- A little softened butter, optional
- Spread the butter very thinly on the wafer first if you are using it; it acts as a barrier and buys the sheet an extra minute.
- Add a teaspoon of jam, no more. Jam is wet and a wafer has no defence against it.
- Press a second sheet on top gently.
- Serve straight away, ideally with a black tea that is strong enough to cut both the jam and the cream.
What you'll end up with: The simplest thing in this list and the one most worth doing. A plain wafer plus fruit acid is most of a dessert for very little effort.
No-Bake Cream and Berry Slice
How to make No-Bake Cream and Berry Slice with Familijne Cream Wafers.
- 12 flat pieces of wafer
- 300ml double cream, whipped
- 200g raspberries or strawberries
- A tablespoon of honey
- Whip the cream to soft peaks with the honey folded through. Do not sweeten it further; the wafer brings plenty.
- Layer wafer, cream, fruit, wafer, and repeat twice in a lined loaf tin.
- Chill for four hours. The sheets soften deliberately here and turn cake-like, which is the one time a soft wafer is what you want.
- Slice with a hot serrated knife and serve cold.
What you'll end up with: The only build where letting a wafer go soft is correct. Four hours turns the stack into something between a sponge and a millefeuille.
Wafer Crumb Over Compote
How to make Wafer Crumb Over Compote with Familijne Cream Wafers.
- 4 fingers of wafer, crushed
- 2 apples, peeled and chopped
- A tablespoon of honey and a squeeze of lemon
- A pinch of salt
- Cook the apple with the honey, lemon and a splash of water until it collapses, then cool it to warm rather than hot.
- Crush the wafer to a coarse rubble by hand.
- Scatter the crumb over the compote at the very last moment with a pinch of salt.
- Eat immediately, while the sheets still have some crunch left in them.
What you'll end up with: A crumble topping that takes no baking at all. The plain cream disappears into the fruit and leaves the texture behind, which is exactly what you want from it.
