Whisky Dirty Chai

Dirty chai, the Coffee-spiked chai, makes a brilliant base for a warming winter drink: its coffee and spice carry a measure of whisky without being overwhelmed. Here it is built on warm milk rather than the usual water toddy, finished with a little honey to round off the whisky and a twist of lemon on the rim for its scent. A proper grown up nightcap for a cold evening, with an alcohol free version too.

You'll need

  • 25g Drink Me Chai Dirty Chai Latte powder (1 standard serving)
  • 200ml whole milk
  • 35ml blended Scotch whisky
  • 1 teaspoon of clear runny honey
  • 1 half slice of fresh lemon, for the rim
  • 1 warmed 400ml mug
  • 1 small saucepan
  • 1 small balloon whisk
  • Alcohol free swap: 35ml chilled ginger beer in place of the whisky, plus a fresh lemon wheel for the rim

Method

  1. Warm a large mug with hot water, then pour it away.
  2. Warm the milk in a small saucepan over medium low heat until it just steams, around 70C, not boiling.
  3. Off the heat, shower in the dirty chai powder and whisk hard for thirty seconds until smooth and uniform.
  4. Pour through a fine sieve into the warmed mug to catch any clumps.
  5. Stir in the whisky and the honey, tasting to balance.
  6. Hook a half slice of lemon over the rim for its scent.
  7. Tip: for an alcohol free version, skip the whisky and add a small splash of ginger beer at the end for a bit of bite.
What you'll end up with: A warm, spiced dirty chai with a quiet whisky glow, balanced with honey and a twist of lemon.
