Tropical Green Tea Rum Punch turns the mango and passion fruit green into a long, easy-drinking cocktail. Cooled green tea gives it a smooth backbone, rum and pineapple bring the warmth and depth, and a squeeze of lime keeps it from tipping into sweet.

Serves one. Brew and chill the green at 80C first so the base is smooth rather than stewed. To make it alcohol-free, leave out the rum and lengthen it with more pineapple juice and a splash of soda.

You'll need

  • 1 tea bag of Tetley Green Tea with Mango and Passion Fruit
  • 100ml just-off-boil water cooled to about 80C (boil, then rest the kettle for roughly 90 seconds)
  • 50ml white or golden rum
  • 50ml pineapple juice
  • 15ml fresh lime juice
  • 10ml sugar syrup
  • Ice, plus a pineapple wedge and mint to serve

Method

  1. Rest the boiled kettle about 90 seconds, steep one bag in 100ml of the 80C water for 3 minutes, then lift it out and chill the tea well.
  2. Add the cooled tea, rum, pineapple juice, lime and sugar syrup to a shaker full of ice.
  3. Shake until frosted, around ten seconds, and strain over fresh ice in a tall glass.
  4. Finish with a pineapple wedge and mint. For an alcohol-free version, drop the rum and lengthen with more pineapple juice and a splash of soda.
What you'll end up with: A long, tropical rum punch with a smooth green tea base, fruity and zingy rather than sugary.
