Tropical Green Tea Rum Punch

Method

  1. Rest the boiled kettle about 90 seconds, steep one bag in 100ml of the 80C water for 3 minutes, then lift it out and chill the tea well.
  2. Add the cooled tea, rum, pineapple juice, lime and sugar syrup to a shaker full of ice.
  3. Shake until frosted, around ten seconds, and strain over fresh ice in a tall glass.
  4. Finish with a pineapple wedge and mint. For an alcohol free version, drop the rum and lengthen with more pineapple juice and a splash of soda.
