This is the after dinner mint in a mug: a strong three mint brew finished with a square of dark chocolate dropped in but not stirred, no milk and no sugar. The chocolate sinks and slowly melts at the bottom, so the last sips come out far richer than the first.

You'll need

  • 1 Pukka Organic Three Mint tea bag
  • 250ml water, boiled then 30 seconds off the boil
  • 1 square (about 10g) dark chocolate (70 percent), broken
  • No milk, no sugar; the chocolate is the sweet

Method

  1. Boil fresh water and let it sit 30 seconds off the boil so it does not scald the mint.
  2. Put the bag in the mug, pour over and cover; steep 5 minutes for a strong base.
  3. Lift the bag out.
  4. Drop the broken square of dark chocolate into the bottom of the mug; do not stir, let it sit there and slowly melt.
  5. As you drink, the chocolate dissolves into the lower half of the mug; the last few sips are intensely rich, like the bottom of an after eight mint with mint tea around it.
What you'll end up with: A mint tea that drinks plain at the top and chocolatey at the bottom: the after eight trick in a mug, no milk and no added sugar.
