Cold brewing is the easiest way to make a big jug of moringa Green Tea, and arguably the nicest. Steeping the bags in cold water in the fridge overnight draws the flavour out slowly, so you get a smooth, naturally sweet drink with none of the bitterness hot water can force from green tea.

A strip of lemon peel and a little ginger steep in alongside for a clean, fresh edge. Makes about a litre.

You'll need

  • 5 Dalgety Moringa with Green Tea bags
  • 1 litre chilled filtered water
  • 1 thin strip of fresh lemon peel, pith trimmed off
  • 2 fresh ginger root coins, peeled and gently crushed (about 15g)
  • 1 clean sterilised 1-litre glass bottle with a tight fitting lid
  • 1 large mixing jug
  • To serve per glass: cubed ice, a fresh lemon slice for the rim

Method

  1. Drop five tea bags into a large jug with the lemon peel and the crushed ginger.
  2. Pour over a litre of cold filtered water and give it one gentle stir; do not squeeze the bags.
  3. Cover the jug and leave it in the fridge for about eight hours, or simply overnight.
  4. In the morning, lift out the bags, peel and ginger, then strain through a fine sieve to catch any sediment.
  5. Bottle it, label it with the date, and keep it in the fridge for up to four days.
  6. To serve, pour about 200ml over a glass of ice and add a slice of lemon.
  7. It needs no sugar, but if you prefer it sweeter, stir a little honey into the bottle on the first day.
What you'll end up with: A clear, pale green brew that tastes clean and lightly sweet, with a whisper of lemon and a soft warmth from the ginger. No bitterness at all, and enough in the bottle for several glasses.
