By Nestlé's account, no biscuit bar outsells the two-finger in the UK, and it has always been sold in the biscuit aisle rather than beside the chocolate. It is built like a chocolate bar, sized to sit next to a mug, and nearly everything about enjoying it well comes down to temperature.
A wafer held together by chocolate
The wafer inside is mostly air in a thin starch lattice, with almost no moisture and very little strength of its own. The milk chocolate shell is what holds the bar together, and it supplies the snap, the gloss and nearly all the aroma. That is why a bar from a cool cupboard breaks cleanly while one from a warm room simply bends.
The published ingredient list starts with sugar and wheat flour, then skimmed and whole milk powders, cocoa mass and cocoa butter, with natural vanilla flavourings further down. Per that list the bar contains wheat, milk and soya. The bar began at Rowntree's in York in 1935, from an employee's idea for something that would fit in a lunch box.
Eight, twelve or eighteen bars?
We stock three boxes of the same bar: eight at 165.6g, twelve at 248.8g and eighteen at 372.6g, which comes to about 20.7g a bar in every size. Because each bar is wrapped on its own, opening the box does not expose the rest, so the size question is really about how steady your storage is and how many people are dipping in.
Eighteen bars keep one person in tea-break chocolate for about two weeks, or a pair of you for one; eight see a working week through with a few to spare. If the box will sit somewhere that warms up in the afternoon and cools overnight, buy the smaller size and restock more often, because that daily swing is what spoils chocolate, as the next section explains.
Bloom, snap and the two-second dunk
Bloom is the pale, chalky film that appears when chocolate warms and sets again. It looks as if something has gone wrong, but it is neither mould nor age, and the bar is safe to eat. What goes is the gloss and the clean break, and neither returns. A cool, dark, steady cupboard prevents it; a shelf above a radiator practically guarantees it.
When dunking, keep your eye on the chocolate, not the wafer, and count to two. The chocolate softens and begins to slide long before the inside gives way, and any finger left in for a third second is likely to finish up in the tea. Pour a standard everyday black blend, brewed three to four minutes, with a generous splash of milk; here, more milk genuinely helps.

FAQ
What is the white film on my KitKat? Bloom, which forms when chocolate warms and sets again. It is not mould and the bar is safe to eat, but the gloss and snap will not return.
How many bars come in each box? Eight, twelve or eighteen, weighing 165.6g, 248.8g and 372.6g, so about 20.7g a bar whichever you pick.
What allergens does the milk chocolate two-finger contain? The published ingredient list names wheat, milk and soya. Check the current UK pack, as recipes and allergen advice can change.
How long can you dunk a two-finger? Two seconds. The coating starts to slide before the wafer gives way, and a third second usually costs you the bar.
How much milk should go in the tea? A generous splash, in a standard black blend brewed three to four minutes. Few pairings benefit from extra milk, but this is one of them.
Curator's note: Count to two, lift, eat. Keep the box away from the radiator and the last bar will be as good as the first. Lee, teas.co.uk, Tunbridge Wells.
