Ginger Hot Toddy

A hot toddy built on ginger tea instead of plain hot water, which gives it far more backbone. Brew Teapigs Ginger and Manuka Honey good and strong, stir a little extra honey through it while it is hot, and add a measure of aged dark rum; the rum and the warming ginger are a natural match.

It makes a proper winter nightcap, or a sociable round for a cold afternoon. For anyone not drinking, leave out the rum and top the same honeyed ginger tea with a splash of ginger beer and a slice of lemon, and it stands up just as well.

You'll need

  • 4 Teapigs Ginger and Manuka Honey tea temples
  • 900ml freshly drawn water, brought to a true rolling boil
  • 4 tsp Manuka honey, warmed in a small jug
  • 80ml aged dark rum (about 20ml per cup)
  • 200ml chilled ginger beer, for the alcohol free version (about 20ml per cup)
  • 1 fresh lemon, sliced, for the alcohol free version
  • 2 tbsp crystallised ginger, to serve
  • 1 warmed teapot and 4 teacups

Method

  1. Warm a teapot and four cups with hot water, then tip it out.
  2. Drop the 4 ginger temples into the pot, pour over 900ml of rolling boiling water, cover, and steep for six minutes for a strong, full bodied brew. Lift the temples out without pressing.
  3. Warm the manuka honey gently in a small jug set over hot water until it loosens.
  4. Pour about 200ml of the hot ginger tea into each cup and stir a little warmed honey into each.
  5. Add 20ml of aged dark rum to each cup and stir once.
  6. For an alcohol free toddy, leave out the rum and top the cup with 20ml of cold ginger beer and a slice of lemon instead.
  7. Serve hot, with crystallised ginger and a plain shortbread on the side.
What you'll end up with: A hot, honeyed ginger toddy with a real warming bite, the dark rum adding a soft vanilla depth, or bright and gingery with ginger beer for the alcohol free version.
